A Rustic Delight: Tortellini and Turkey Sausage Soup

I originally found this recipe on A Taste Of Home via Pinterest- my go to site for awesome tips and recipes. Since making this soup numerous times, I’ve tweeked the original recipe to one that has become a household favorite. It’s a quick and simple soup that is incredibly hearty, and divine as leftovers. Who doesn’t love a soup that gets better the next day?
Ingredients
20 oz. Italian turkey sausage uncooked, casings removed  ~approx. 5 links
2 medium onions, chopped
64 oz chicken broth (reduced sodium broth is excellent)
28 oz can of diced tomatoes
1   9-12 oz package Refrigerated tortellini: cheese or meat, your preference
6 oz fresh baby spinach, chopped
8 cloves garlic, minced2 tsp. dried basil or 1/3 cup fresh basil, chopped
3/4 tsp. ground pepper
1/2 tsp. extra hot Indian chili pepper or chili powder
Shredded Parmesan cheese for garnish.
Brown sausage in a Dutch oven or large soup pot and add the onions to caramelize. Next, add the broth, tomatoes, pepper, and chili powder and let simmer for 15-20 minutes to let the flavors marry, at this point you can taste broth to see if you want to add any additional salt or chili pepper. Now, add the tortellini, stir, and let cook 5-10 minutes. Lastly, add your garlic and basil, then your chopped spinach, stirring until wilted. Serve with Parmesan cheese garnish to taste.

Tips:
If you like a spicy sausage look for a Hot Italian turkey sausage or you can choose a sweet Italian variety if you like a milder taste. Forgo the chili pepper if you do not like a spice “heat.” I love the Extra Hot Chili pepper I find at my favorite online Indian grocery; it’s is a very warm, but less aggressive chili powder mix that hits the back of your palette as opposed to our traditional chilies that heat up on the front of your tongue. And, you can add more tortellini if you want more pasta in the soup. I often add more if I want the soup to go farther for meals (the tortellini fills you up! )
